This long essay on the significance of food and cooking in Huysmans' work originally appeared in the Nouvelle revue in 1936. Fontan then published it a year later as a plaquette of 38 pages, in a small edition of just 103 copies. The essay was reprinted in the Bulletin de la Société J.-K Huysmans later in the same year.
